Nathalie regards En Journoblot as the pinnacle of their terroir. Situated bordering the Grand Cru of Criots-Bâtard-Montrachet, and a mere 15 meters from Bâtard-Montrachet, this plot boasts distinct soil composition compared to her other vineyards. The abundance of limestone closer to the surface, owing to the steep slope and shallow soil, sets it apart. Its south-facing exposure ensures ample sunlight. With 0.4 hectares under vine, boasting an average vine age of 45 years, Nathalie notes that this site consistently yields exceptionally small berries due to its unique terroir.
The winemaking process begins with meticulous handpicking, followed by whole-bunch pressing into tanks. After settling overnight, the juice is transferred to barrels, with 20% being new oak. Wild fermentation ensues, followed by malolactic fermentation. The wine then rests on fine lees for 12 months, with batonnage frequency tailored to the vintage. Afterward, it spends an additional 4 months in tank before bottling.
