In 1999 Francois added the Saint Aubin vineyards of his father-in-law which included two hectares of chardonnay. The Domaine farms its vineyards organically, there is a strict berry by berry selection at harvest, the fruit is 100% de-stemmed, winemaking is traditional with 25% new oak featuring four different quality coopers.
