This is the first vintage that Callum has been able to source a small section of the Hoffmann family’s Dallwitz Old plantings in Ebenezer. In addition to that, he’s been able to maintain his allocation of grapes from the Hoffmann’s Dimchurch Home Old vineyard, which is their original property from 1857. Callum’s family has worked with the Hoffmanns for nearly three decades so Callum calls the opportunity to work with this site is a “treasured sentiment.” Callum likes to use the comparison of two of Hermitage’s best vineyards to describe the differences between his Flaxman and Ebenezer Syrahs. He likens the Flaxman wine to Les Bessards, which has the bones (think savory, aromatic, lean tannins), and the Ebenezer wine to Le Meal, which has the flesh (think darker fruits, rounder, more gliding tannins).\u003c\/p\u003e\n\u003cp\u003eThe grapes were all harvested by hand on various picking dates and brought back to the cellar to ferment spontaneously as whole bunches in closed stainless steel tanks. After 3-4 weeks depending on the lot, the wine was pressed off the skins and racked to old puncheons and barriques, where it remained for 12 months of aging. The valley is at about 1650 feet in elevation, which is some of the highest grape growing land in South Australia. The land was formed by a meteorite impact some 35 million years ago, which is now the “Flaxman Crater” made up of steep granite and quartz hillsides and shallow loam topsoils. This valley receives about 28 inches of rain per year, which is considerably more than the Ebenezer vineyards. While these two sites are just 20 miles from each other, they have considerably different growing season conditions. The cooler, wetter climate of the Flaxman Valley gives a lot of elegance to this wine. Callum likens its provenance to Les Bessards in Hermitage, which gives savory aromatics and bony tannins. In 2022, due to low yields in Flaxman Valley after a particularly devastating hail storm, this has become a very neighborly wine of small picks from Chris Ringland’s ‘Three Rivers’ vineyard to the left of Callum’s cellar, Nathan Burley’s ‘Hill’ vineyard to his right and ‘Naimanya’ a little further up the hill.\u003c\/p\u003e\n\u003cp\u003eThe grapes were all harvested by hand on various picking dates, and brought back to the cellar to ferment spontaneously in stainless-steel tanks as whole bunches with carbonic maceration. Kevin Bell and Tricia Byrnes are immersed in the task of showcasing what their 3 differing single vineyard plots or climats can express. Burgundy clearly inspired them to this endeavour, not to mimic the wines from the Cote d’Or in terms of taste but the ethos of single site expressions, terrior driven wines. Planted in 1998 and 1999 the estate has 3.43 hectares of Pinot Noir across 3 clearly defined climats: Lodestone, Hommage and Garamond.\u003c\/p\u003e\n\n\u003cp\u003eKevin says: “Our principles are: organic viticulture, non-irrigation, low yields and true expression of the terroir of a vineyard and the individual climats within a vineyard”.Hommage is in-between Lodestone and Garamond in almost every way. It is harvested second. Typically, it smells distinctly of ripe plums and the forest floor. It can have the subtle fragrance of flowers. Invariably it tastes of wine gums and jubes. You can always see soft, squishy berries, like mulberries, and firmer ones, like blueberries. The fermenting vats actually smell and taste that way! Hommage tastes more of fruit than earth. It is full and supple in the palate, but not loose. Our emphasis now is more on the freshness of the fruit – the point where the sweetness is balanced by velvety tannins. It is often described as ‘Burgundian’.\u003c\/p\u003e\n\n\u003cp\u003eHommage is North East facing and a lot more sheltered than Lodestone from the elements. A very small plot of just over 1 Hectare planted in 1998 \u0026amp; 1999. Kevin and Tricia are quick to acknowledge that this vineyard was made possible from the generosity of Main Ridge Estate who offered cuttings of the G5V15 Pinot clone.
